Broccoli, rice and cheese casserole is a quick weeknight meal.

Instructions
1. Preheat the oven to 350 F.
2. Chop the onion into small pieces. Melt the butter in a skillet over medium heat and add the onions. Sautee the onions until they are tender. Remove them from the heat, allowing them to cool.
3. Cook the frozen broccoli according to the package's directions. Drain and set it aside to cool.
4. Cook the rice on the stove according to the package directions. Set it aside to cool.
5. Mix all of the ingredients in a larger mixing bowl, except for ½ cup of the shredded cheese. Stir until the ingredients are well-mixed.
6. Pour the mixture into a casserole dish. Sprinkle the remaining ½ cup of cheese evenly across the top. Cover the dish with tin foil, place it in the oven and bake it for 20 minutes.
7. Remove the tinfoil from the casserole and continue to bake until the cheese is fully melted and bubbly in appearance, roughly 10 more minutes.
