Bread pakoda can be thought of as a savory, spicy Indian version of French toast. This snack is good any time of the day. The ingredients can readily be found in many international stores as well as specialty food markets. This is a good way to use up leftover bread that might be slightly stale. Any type of bread will work, including white and whole wheat. Take a bit of time to make some bread pakoda to savor a crispy Indian treat morning, noon or night.
Instructions
1. Combine the dry ingredients (flours, salt, chili powder and baking soda) in a bowl.
2. Mix in enough water to make a smooth batter. This will be about 1/8 to 1/3 c. depending upon your kitchen conditions. The batter should resemble a pancake batter.
3. Pour oil to reach a depth of 2 inches in the skillet. Heat the oil over medium heat.
4. Measure the temperature of the oil with the frying thermometer. When it is 375 degrees, you are ready to dip and fry your pakoda.
5. Dip each half of the bread into the batter to completely cover and place into the hot oil. Fry two pieces at a time.
6. Watch the bread until it turns brown on the bottom (about two to three minutes) and flip using tongs or a slotted spoon. Continue to cook on the other side until it is also golden brown (about two to three minutes).
7. Remove the bread from the hot oil and place on the drainage rack or paper towels to drain. Repeat steps 5 and 6 with the remaining bread. Serve hot or at room temperature.
