Barbecue Vegetarian Shish Kebobs

Many vegetarians don't barbecue because they think it's only for meat. But grilling fresh organic vegetables can add variety and excitement to a meal with rice or quinoa and delight the meat eaters at your table with a familiar, yet very healthy and delicious meal.








Instructions


Shish Kebobs Are Quick and Delicious


1. Wash all vegetables.


2. Preheat your gas grill to "medium" or start charcoal briquettes about 20 minutes before you are ready to cook shish kebobs. You can also use your oven broiler: preheat it to 400 degrees while you're busy preparing the vegetables.


3. Slice zucchini, bell peppers, Japanese eggplant and any other vegetables you want to skewer on the shish kebob skewers.


4. Leave mushrooms, pearl onions and cherry tomatoes whole.


5. Skewer all vegetables on skewers in a configuration that looks attractive.


6. Place your vegetables on the grill or under the broiler.


7. Brush vegetables with a little olive oil mixed with crushed garlic if you wish.


8. Cook for about 15 minutes, turning once or twice to ensure even cooking.


9. Serve with rice, pasta or other grain dish.
