Make Spring Green Onion Soup

Spring green onions have a fresh flavor and vibrant color.


Celebrate spring by making a fresh and tasty green onion soup from scratch. Spring green onion soup is a lighter, healthier version of its heavy French onion counterpart but still packs a flavorful punch. If you have a garden, use your green onion harvest, along with other vegetables, to make the nutritious soup. Green onion soup makes a filling meal when served alongside crusty bread or rolls and a garden salad.


Instructions


1. Melt 4 tbsp. of butter over medium heat in a large saucepan.


2. Rinse the green onions under cool, running tap water to remove any dirt or pesticides. Pat the onions dry with a paper towel. Chop 3 cups of green onions and add them to the melted butter.


3. Saute the onions, along with one peeled, minced clove of garlic, for 5 minutes. Add 2 cups of sliced white or baby portobello mushrooms and saute for another 5 minutes.








4. Pour 6 cups of vegetable or beef broth, depending on your preferences, into the pan and stir to blend. Bring the broth to a boil over high heat. Reduce the heat to "low" and simmer the broth, covered, for 10 minutes.


5. Season with salt and freshly ground black pepper to taste. Spoon the soup into individual serving bowls and top with crunchy croutons.
