Make Chicken Crostini

Crostini is an elegant appetizer.


The word crostini means "little toasts" in Italian. Crostini is a versatile appetizer, as it can be topped with an endless variety of savory ingredients. When preparing chicken crostini, freshly cooked chicken breast is optimal. However, rotisserie chicken purchased from a grocery store is an excellent stand-in.


Instructions








1. Slice the baguette into 1/2-inch thick rounds and place on baking sheet.


2. Set broiler to high and place baguette slices under broiler for 1-1/2 minutes on each side, using tongs to flip the slices; they should be crispy and golden brown. Remove from broiler and allow baguette slices to cool.


3. Combine diced chicken, chopped onion, olive oil, balsamic vinegar, thyme, basil, salt and pepper in mixing bowl. Stir to combine.








4. Top each baguette slice with the chicken mixture, making sure each slice receives the same amount.


5. Crumble goat cheese on top of the chicken crostini and serve.
