Make Honey Glazed Carrots

If you can't get your kids to eat their veggies, try this recipe. Carrots with honey glazing make a delightful change. The sweetness of the carrots combined with the sweetness of the honey make a side dish that the entire family can enjoy. Ginger adds a layer of flavor to this dish that moves it beyond a simple, sweet dish. Use canned carrots if fresh carrots are not available. If using canned carrots, skip the step on boiling the carrots.


Instructions








1. Place carrots in a saucepan with enough water to just barely cover them.


2. Bring the water to a boil and cook until the carrots are tender, about five minutes.


3. Melt the butter in a large skillet. Add the honey and simmer, stirring constantly with a wooden spoon.


4. Add the lemon juice and ginger to the skillet and mix well.


5. Drain the carrots and add to skillet. Stir to coat the carrots thoroughly.








6. Cook for three minutes to allow the ingredients to blend.
