Special syrups for your pancakes can turn a boring unimaginative breakfast into a real treat. This syrup uses fresh blueberries and you can really enjoy their wonderful taste.
Instructions
1. Wash your blueberries well. Remove any pieces of stem or any that seem spoiled. Put them into a food processor and puree for one minute. You can also use a blender if you'd rather.
2. Put the puree mix into the pan. Slowly stir in the sugar and water and keep stirring until they're well mixed. Stir regularly and cook for half an hour on medium heat.
3. Take the mixture off the heat. Add lemon juice and stir well.
4. Strain your syrup through a coffee filter or cheesecloth. Put it into your sterilized jar. Let it cool to a temperature cool enough to eat and serve.
5. Celebrate by sampling your wonderful syrup. This recipe makes 32 ounces of syrup. You can halve or double it. It keeps in the refrigerator for 6 months. This makes a lovely gift item.
