Cook Dried Cranberry Beans

Cranberry beans feature an eye-catching color combination.


Cranberry beans, also known as Borlotti beans, are white or cream and feature visually appealing cranberry red markings. The mild-tasting beans have a nutty flavor. You can add the hearty beans to a variety of your favorite recipes, including soups and stews. Cooked cranberry beans will also add color to salads. Use the beans to add protein to vegetarian meals as well. Prepare the beans simply on your stove top, but be aware that they may lose some of their signature color during the cooking process.


Instructions


1. Spread the cranberry beans out on a clean kitchen towel and sort through them. Remove and discard any shriveled beans or debris such as small stones.


2. Transfer the beans to a large bowl and cover them with water. Cover the bowl with plastic wrap. Soak the beans in your refrigerator for eight hours.








3. Drain the beans in a colander over your sink. Transfer the soaked beans into a large pot. Add water at a ratio of 1 cup of beans to 3 cups of water. Bring the beans to a boil over high heat for 15 minutes.


4. Reduce the temperature to "medium-low" and cover the pot. Simmer the beans for three hours, or until they are tender. Be careful not to overcook the beans as they will become mushy. Stir the beans occasionally throughout the cooking process.
