Mushrooms stuffed with crabmeat are served as appetizers or snacks. The crab stuffing can consist of a variety of seasonings, vegetables and herbs. Removing the stems from the mushrooms allows more room for the filling. Prepare the appetizers ahead of time and bake them in the oven just before you plan to serve them for best results.
Instructions
1. Wipe the mushrooms with damp paper towels. Soaking the mushrooms in water will cause them to swell because they absorb the water like a sponge.
2. Trim the ends off the mushrooms as close to the caps as possible. Chop the stems into small pieces and set aside.
3. Melt 2 tbsp. of butter in a saucepan. Brush the melted butter over the mushrooms.
4. Coat a shallow baking dish with nonstick spray. Melt 4 tbsp. of butter in a skillet. Add the chopped mushroom stems, minced onions and chopped red bell pepper.
5. Saute the vegetables until they are tender. Combine the vegetables with the breadcrumbs, crab meat, salt, pepper and Parmesan cheese.
6. Mix the ingredients together well. Scoop the mixture into the mushroom caps to fill them.
7. Heat the oven to 350 degrees Fahrenheit. Bake the mushrooms for 15 to 20 minutes or until they are golden brown and the caps become tender.
