Make Peanut Butter Balls

Forget the sandwich; turn your peanut butter into a delicious chocolate treat.

Peanut butter balls are reminiscent of the holidays and family gatherings to swap cookie and candy recipes to see which ones are best. Peanut butter balls are a holiday staple in many households, and not just at the holidays. They are simple to make and must be prepared ahead of time, making them a good after-dinner treat to be served with coffee. Use your own homemade peanut butter or any store-bought brand.

Instructions

1. Make peanut butter. Place 3 cups of shelled, roasted unsalted peanuts into the bowl of a food processor. Process until smooth. The natural oils will turn the peanuts into a spread. If it seems a little dry, add a small amount of peanut oil.

2. Combine 18 ounces of your peanut butter, a box of powdered sugar, 1 1/3 cups of graham cracker crumbs and 1 1/2 sticks of butter in a large bowl. Mix to combine. Roll the mixture into small balls with your hands and place them on a baking sheet or plate. Refrigerate until hard.

3. Melt 12 oz. of milk chocolate baking squares in a small bowl in the microwave. Process the chocolate for only 15 seconds at a time, stirring after every interval. It should take one to two minutes for the chocolate to become smooth.

4. Remove the peanut butter balls from the fridge and gently dip them into the chocolate. Roll them around to cover and scoop them out using a fork. The fork allows excess chocolate to drip away. Return to the baking sheet and refrigerate until the chocolate is set.
