It's easier than you might think to make fried zucchini. The taste is unbeatable and this is a good way to sneak some vegetables into your family's diet. For even better flavor, prepare zucchini that's freshly picked from your own garden. This recipe will soon become a favorite.
Instructions
1. Wash the zucchini and cut it into slices. You can make the slices thick or thin and leave the skin on.
2. Beat 3 to 4 eggs well in a shallow, medium-size container.
3. Mix 2 cups flour and 1/2 teaspoon each of salt and pepper in a separate container.
4. Pour cooking oil into a frying pan 1 to 2 inches deep, but no deeper than halfway up the side of the frying pan. Heat the oil over medium.
5. Dip both sides of the zucchini into the eggs and then into the flour mix.
6. Place the coated zucchini into the hot cooking oil, and cook about 3 to 4 minutes on each side.
7. Remove the fried zucchini from the frying pan and place on a paper towels to drain. Serve with ranch dressing or another favorite dip.
