With a cultural mix of Amerindian, Spanish, African, English, French and later Indians and Chinese, the Republic of Trinidad and Tobago offers a cuisine as diverse as the people who live there.
African Inspiration
When African slaves arrived on the island, they brought with them a distinct style in their hearty stews and one-pot comfort meals. Rich Creole foods blend with African tastes in oxtail soup and pelau, a rice stew with peas and meat.
Indian Spice
Islanders' love of spices makes Indian food a favorite among natives. Fried potatoes pies can be found at roadside stands as well as coconut fudge and milk balls in a sweet syrup. Fiery curry dishes and rotis, flatbreads served with meat or chickpeas and vegetables, are popular as lunchtime meals.
Street Vendors
Street vendors selling jerk meats, ice cream and barbecue can be found till the early morning hours. Snow cones are another popular street vendor treat and perfect for the tropical heat.
Exotic Food
For exotic cuisine choices, conch, an edible marine snail, is served with cocktail sauce or a spicy curry. Wild meat such as iguana and armadillo are very popular during hunting season.
Chinese Cuisine
In the larger towns and cities, Chinese restaurants are common, with some streets having as many as three or four restaurants. Traditional Chinese food has adapted to the native island spices, creating a distinctive style and flavor.
