French Pea Soup Recipe

Sometimes ham is put in French pea soup.


Recipes for French pea soup date back to the Louis XIV era. Originally, French pea soup was served on top of a large slice of bread. Today, most recipes do not call for the bread. Even though this soup is meatless and fits a vegetarian diet, occasionally some people will also include small chunks of ham. Here is an old-fashioned French pea soup recipe.








Ingredients


To make this traditional dish, you will need: 8 cups of water, 1 1/2 cups of split peas, 3 large carrots, 1/4 cup of butter, 2 tbsp. of chopped parsley, 1 diced onion, 3 chopped cloves and salt to taste. You can optionally include: 2 cups of chopped ham, 1 spring of savory, 2 tbsp. of chopped sorrel and 2 tbsp. of chopped chervil.


Process


Rinse off the peas and carrots. Bring the water to boil. Add the split peas and the butter to the water. Turn the heat down to medium high. After 30 minutes, add the carrots. After 30 more minutes add the rest of the ingredients. Turn the heat to low. Allow the soup to cook until all of the peas are broken and tender, stirring occasionally.
