Make Crunchy Chicken Chunks

These tasty crispy chicken chunks are perfect as an appetizer, or as a snack. They fit perfectly in the wee hands of children, and are requested during sleepovers. They make the perfect children's snack. These crispy chicken chunks are also economical. Three average-sized chicken breasts will make almost two whole pans of chunks--enough to feed a small army of hungry children.


Instructions


1. Preheat the oven to 350 degrees. Using the cutting board and knife, carefully slice the chicken breasts into small chunks. The chunks should be between 1 and 2 inches. Place chicken chunks on a paper plate.


2. On another paper plate, crush several handfuls of potato chips into tiny pieces. Mix the plain chips well with the barbecue, and set chips aside.


3. Crack the eggs into the bowl, and whisk the eggs until well mixed.


4. Dip the chicken chunks in the egg. Coat the chunks well with the egg mixture, then roll them in the potato chip mixture. Completely coat the chunks with potato chips. Place them on the cookie sheet. Leave space between the chunks.








5. Place the cookie sheet in the oven and bake for approximately 10 minutes. Remove the delicious crispy chicken chunks from the cookie sheets, and serve.
