Refrigerate Twicebaked Potatoes

Twice-baked potatoes make delicious side dishes or appetizers.


Twice-baked potatoes can be hearty enough to serve as a main course and also make tasty accompaniments to meat and fish dishes. You can also treat dinner party guests to twice-baked potatoes enhanced with a variety of fillings. To make twice-baked potatoes, bake the potato until the skin is crispy and the inside is soft. Scoop the potatoes out and mix them with bacon, chives and any type of cheese, from sharp cheddar to crumbled blue cheese. Refrigerate leftovers to enjoy later.


Instructions


1. Place the twice-baked potato in a shallow plastic storage container featuring an airtight lid. Don't allow the potato to sit out at room temperature longer than two hours prior to refrigerating it.


2. Press the lid tightly onto the container to create a secure seal.


3. Write the storage date on a piece of masking tape and press it onto the container as a convenient reference.








4. Store the potato in a refrigerator set at 40 F for up to three days.
