Cook Very Tender Teriyaki Chicken

Grill your chicken teriyaki to ensure it is moist and tender.


Chicken Teriyaki is a staple of Japanese cuisine. The name Teriyaki means "lacquered" and "grilled" -- a combination of the two Japanese words "Teri" and "Yaki." This classic dish is prepared by marinating the chicken overnight in a sweet sauce and then grilling the meat to give it a glazed surface. In order to get the most tender chicken possible, avoid freezing the meat prior to cooking and avoid overcooking the meat, which will make it dry and tough.


Instructions


1. Prepare your marinade in a large bowl. Mix together your pineapple juice, soy sauce, ginger, garlic and white pepper. Stir the marinade to mix the ingredients thoroughly and then take a small quantity of the sauce and set it aside in a smaller bowl---this will be used to dip the chicken once the meal is prepared.


2. Set the chicken breasts into the marinade and cover with plastic wrap. Set the dish into the refrigerator and marinate the meat for at least 24 hours.








3. Turn on your outdoor grill when the chicken has finished marinating and set the temperature to medium-high heat.


4. Brush the grill's grate with a light coating of oil and set the chicken onto the grill. Depending on how thick the meat is, you will need to grill it for five to seven minutes on each side. Test the chicken by cutting it open to make sure the meat is not pink.








5. Slice the meat and serve over a bed of rice with the sauce you saved from the marinade.
