Roast Tomatillos In The Oven

Tomatillos have papery husks.


Tomatillos blend well with cilantro, spicy peppers and other common ingredients, and are responsible for adding a bright flavor to many Mexican dishes. Roasting mellows the tart flavor of the tomatillos and adds a note of sweetness; it's a common way to prepare tomatillos for use in salsas and sauces. Look for tomatillos in a Latin-American grocery if you can't find them in your usual grocery store. Choose tomatillos that are firm and bright green under the husks.


Instructions


1. Place an oven rack about 4 inches from the heat source and preheat the oven to broil.


2. Remove the husks from the tomatillos.


3. Rinse the tomatillos with water and rub them gently until you cannot feel any sticky residue remaining.


4. Line the baking tray with aluminum foil and place the tomatillos on the tray stem-side down.


5. Place the tray in the oven and roast the tomatillos for 5 minutes.


6. Remove the tray, turn the tomatillos over and roast them for 5 more minutes.


7. Remove the tray from the oven and check whether the tomatillos are done. They should be collapsed and have blistered, darkened skin.


8. Turn the oven off and return the tray to the oven for a few minutes if the tomatillos are not completely soft.








9. Allow the roasted tomatillos to cool before working with them.
