Make Feta And Walnut Brussels Sprouts

You probably loathed brussels sprouts as a kid. But our tastes change as we grow. This vegetable with a powerful flavor is full of folic acid, vitamin C and vitamin K. It strengthens your body's natural defenses against disease, including cancer. Make this salad with feta and walnuts and you'll change your mind about brussels sprouts.


Instructions


1. Pour the lemon juice and vinegar in a small bowl. Add the honey and mix vigorously until the honey dissolves.








2. Combine the ingredients from Step 1 with the olive oil, basil, salt and pepper. Mix well and taste the dressing. Add more honey if it's too sour or more vinegar if it's too sweet. Let the flavors blend in the refrigerator while you prepare the salad.


3. Cut the brussels sprouts into halves, quarters or eighths, depending on their size. Place in a large salad bowl.








4. Slice the onion into thin strips. Chop the walnuts into small pieces. Add them to the salad.


5. Remove the dressing from the refrigerator. Whisk it well and add it to the salad bowl. Generously coat the vegetables.


6. Divide the feta block into thin slices and mash with a fork. Add to the salad and mix well.


7. Let your salad sit in the refrigerator for at least a day before serving.
