Make Ras Malai Dessert

Ras Malai is a delicious Indian cheese curd dessert that is perfect as the ending for any scrumptious meal.


Instructions


1. Heat your milk in a pot and bring it to boil. Remove it from your heat. Add your lemon juice. Stir this mixture slowly until white curd forms on the surface and separates from your whey.








2. Strain your milk and save the curds. Wash your curds well under cold running water and twist the cloth that was used for straining to extract water. Knead your curd to make a smooth dough. Add your flour and knead again. From this, make small balls of equal size of the dough and set aside. Next make sugar syrup. Mix sugar and water in a saucepan and bring it to boil.


3. Next make your sugar syrup. Mix sugar and water in a saucepan and bring it to boil. Add your curd balls to the syrup and cook for about 15 minutes with lid partially covered. Your Ras Malai dumplings will then start to expand. Turn your heat off and add your cardamom powder. Keep the cheese dumplings aside. Boil milk for your cream sauce in another nonstick pot. Bring this to a boil and then reduce your heat to medium. Cook until it becomes thick and creamy and is reduced to half it's starting density. Stir occasionally to prevent its sticking to the bottom of the pan. Add sugar and cook for 5 minutes. Remove from the heat. Let this sauce cool to room tempature. Once your cream sauce has cooled to room temperature add your Ras Malai balls. You can serve warm or chill and serve cold. Top with your sliced almonds and pistachios or selection of dried fruits.
