Instructions
1. Saute onions and celery in cooking oil inside of a heavy pot until the onions are tender.
2. Add crawfish tails and fat and cook for 15 to 20 minutes.
3. Dissolve cornstarch in water and combine with crawfish, cooking together until thick. You will have to stir the mixture constantly.
4. Put in seasoning and green onions and set aside off of fire.
5. Fill the pie shells with the mixture and put tops on the pie shells. Cut slits in the tops of the pie shells.
6. Bake at 350 degrees F for approximately 15 minutes. Lower the heat to 300 degrees F. Continue baking for an additional 15 minutes or until the crust of the pie is a golden brown.
