German potato soup, known as Sachsiche Kartoffelsuppewhich in Germany, pairs perfectly with cornbread and is sure to warm you up on a warm day. Loaded with chunky potatoes, sauteed sausage slices and green beans, it is both flavorful and healthy. The soup requires little prep time.
Instructions
1. Peel and wash the potatoes. Dice them into small pieces.
2. Fill a large pot halfway full of water and put it on the stove to boil.
3. Pour the chopped potatoes into the boiling water. Cook for 10 to 15 minutes, until a fork penetrates them easily.
4. Cut the sausage into 1/2 inch slices. Throw half of the sausage slices into the pot with the potatoes.
5. Chop up the onion and mince one clove of garlic while the potatoes cook.
6. Saute the rest of the sausage in a frying pan with 2 tbsp. of butter, the minced garlic and 2 tbsp. of the chopped onion.
7. Pour half of the water out of the pot of cooked potatoes.
8. Add the sausage, garlic and onions to the pot once the sausage is slightly browned.
9. Add both cans of cream of potato soup to the potato and sausage mixture. Stir well.
10. Drain the green beans and add them to the soup.
11. Simmer the ingredients on low heat for 10 minutes. Add salt and pepper to taste.
